I keep experimenting with my new air fryer and each time I use it the food is getting better and better. Today’s recipe came out of a need for something crunchy and salty. It really came out of nowhere and 15 minutes after coming up with the idea I was tasting a delicious snack. Yep, 15 minutes folks!
The answer is bacon. It’s always bacon. Even if we aren’t sure what the question is. Bacon covered with hot sauce and crunched up pork rinds. I know that this is pork on pork and maybe that’s weird. But if this is weird, then I don’t want to be normal.
To grind the pork rinds I just used a mini food processor attachment that came with my beloved immersion blender. Fresh pork rinds are always best. The Mr. likes to open them up and eat them, then leave the bag open so that they get a little stale. It’s intentional, just to irritate me. Gosh, I love him.
You can buy already crushed pork rind “bread crumbs.” I think they make a great low carb alternative to panko. I haven’t seen them in the stores, but they are available on Amazon and they are called Bacon’s Heir Pork Panko. Leave me a comment if you’ve tried them, I’m curious how they are!
All you need to do is cut the bacon into pieces, cover it in hot sauce and coat it in the pork rind crumbs. Lay the pieces in the air fryer and cook at 350F for 10 minutes. Thicker bacon might need more time in the air fryer, thinner slices less.
This low carb/keto snack will satisfy the craving for crunchy and salty snacks, while getting a spicy kick too! To lower the sodium, try Tabasco sauce, which tends to have less than other hot sauces.
