This Baked Garlic Parmesan Cauliflower Mash is a flavorful low carb side dish that is a fun substitute for traditional starchy mashed potatoes.
Thanksgiving is a month away and I’ve been in the kitchen creating some low carb recipes to go with the big meal. While mashed potatoes are a fan favorite around here, I really wanted to have a low carb, even keto, substitute.

Mashed cauliflower has been a mash potato substitute for ages, and although it’s delish, I’ve always found it too watery. So I applied the same trick that I use when making dishes with zucchini. I steamed the cauliflower, used the hand mixer to break it into small pieces, then I wrung it out in a cheesecloth. Over a cup of water came out of the cauliflower!
At that point, I mashed it some more, added the ingredients and threw it into the oven. You can use any fresh herb you’d like. I used fresh dill, since it’s my fave and I bought a ton recently.
If you like your cauliflower mash really smooth, feel free to throw in in a food processor or blender to really make it smooth. I like mine a little “lumpy.”

This cauliflower mash looks delicious. And I love that it's not a runny mash, which can happen with cauliflower.
