Sometimes the best dinners come as a surprise. Like the evenings where you don’t know what to make, but you just happen to have a bunch of stuff on hand that magically forms a dinner. That’s what happened with these buffalo chicken lettuce cups.

My two favorite ways to cook chicken breasts…in the Instant Pot or in the slow cooker.

I always have shredded chicken cooked and in the fridge. It’s just part of my food prep, and it may be the only then I am consistent about prepping. Oh and I always have buffalo sauce too. I’m not sure what happened, because I used to not like it. But in the past year something changed and it’s a flavor that I crave from time to time. So I buy the big jars of it at the market.

These buffalo chicken lettuce cups made a quick and perfect weeknight dinner. I’ve been playing with intermittent fasting, and I have my last meal before 7 pm. Well, it was 6:20, so I had to act quick. While the chicken heated up, I chopped veggies and washed the butter lettuce. By 6:40 I was eating! Not bad, huh?

Buffalo Chicken Lettuce Cups

Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup buffalo sauce
  • 1/2 teaspoon garlic powder
  • 3 tablespoons cream cheese
  • 8 leaves of butter lettuce
  • Optional Toppings:
  • chopped celery
  • chopped red cabbage
  • sliced radishes
  • blue cheese dressing

Instructions

Heat chicken, buffalo sauce, garlic powder and cream cheese until chicken is hot and cream cheese is melted. Add 1/4 cup of chicken mix to each lettuce leaf. Top with optional toppings. Serve immediately.
