This low carb cauliflower cheeseburger egg bake makes a perfect, simple weeknight meal. It’s filling and a great way to sneak in those veggies!
One of the tough things about being a busy mom is making dinner. I mean I love to cook and all, but the family expects dinner EVERY. SINGLE. NIGHT. All joking aside, it is nice to have a meal to fall back on that the whole family likes. This cauliflower cheeseburger egg bake is one of those meals. I can prepare it ahead of time and stick it in the fridge. It has to bake for 40 minutes, but then it is ready and has protein and vegetables in one dish. I usually use cauliflower, but I often add broccoli or spinach to it. And sometimes a little bacon. Yum!
Fresh cauliflower is so tasty. For the egg bake I like to chop it up into smallish pieces, including the stem. The stem is delicious, so chop it up and throw it in. No need to waste it.

Any variety of cheese will work. I happened to have colby-jack on hand. Colby-jack is mild so all the kids like it. Myself, I give me an extra sharp aged cheddar any day. But I’ll eat any cheese, even the stinky ones. I’m beginning to think that I need to upgrade my cheese grater though. I have a issue with grating my knuckles. It hurts. Maybe a rotary one is safer?

It’s true that I eat a ton of eggs. I love the protein I get from them and I love the taste. What I don’t love is cleaning the cookware I use when I make something with eggs. Why do they stick so well and bake on to the dishes?!? Ugh, so annoying. I have resorted to getting a scrub brush just to get the egg off. Of course it’s a different scrub brush then the ones I use to clean all of our water bottles. Perhaps I need this scrub brush sink thingy…
Cauliflower Cheeseburger Egg Bake

Ingredients
- 8 eggs
- 1/4 cup heavy cream
- 1 lb ground beef, seasoned and browned
- 1/2 head of cauliflower
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 and 1/2 cups grated cheddar cheese
Instructions
Preheat oven to 350F.
Season and brown ground beef. Combine eggs and heavy cream in a large bowl until well mixed. Add 1 cup of cheese, garlic and onion powders and black pepper to taste into egg mixture. Chop cauliflower into small pieces. Place cauliflower in a greased baking dish. Layer ground beef into dish. Pour egg mixture in to baking dish on to beef and cauliflower. Sprinkle with remaining cheese.
Bake for 40 minutes.
Notes
Add whatever meats or vegetables to this recipe. It'll be delicious. It can be served with sour cream, salsa, hatch green chilies, bacon crumbles, etc.
