I don’t know why I didn’t think of Everything Cloud Bread before. It’s kind of silly. I love Everything But The Bagel Seasoning from Trader Joes. I put it on lots of things. It’s delicious on scrambled eggs, avocado, mashed cauliflower, Low Carb Everything Crackers. It’s just THAT good. Of course, my breath is KICKIN’ afterwards…but that’s what gum is for!

Just in case you wondered, I make a mean sandwich. Like it’s known that the sandwiches I make are damn good. So good that I think I should enter a sandwich making contest. Yep. Since eating low carb, traditional sandwiches have gone by the wayside for me. But not today.

Anyone that eats low carb or a ketogenic diet knows that cloud bread isn’t bread. It’s light and fluffy and it’s just not bread. But it works as a substitute for bread in some situations. Like for my favorite chicken, pesto, havarti, and avocado sandwich. (Oops, I totally forgot the avocado in this picture!)

Seriously, this is just plain old cloud bread, with some much needed flavor. I put a little Everything But The Bagel Seasoning into the egg mixture. Then I liberally sprinkled it on top. It turned out delish.

Everything Cloud Bread

Yield: 6 pieces
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Ingredients

  • 3 eggs, whites and yolks separated
  • 1/8 teaspoon Cream of Tartar
  • 3 tablespoons (1.5 ounces) cream cheese, softened
  • 1/8 teaspoon Swerve or other sweetener
  • 1 teaspoon Everything But The Bagel Seasoning
  • More Everything But the Bagel Seasoning to sprinkle on top

Instructions

Preheat oven to 300F. Prepare a baking sheet with either parchment paper or a Silpat.

In a large bowl, using a hand mixer, beat egg whites and cream of tartar until stiff peaks form. Set aside. In a second bowl, mix together yolks and cream cheese until well blended. Add in Swerve, and 1/2 teaspoon of Everything But The Bagel Seasoning. Gently fold egg whites and yolk mixture together.

Spoon mixture into six pieces onto prepared baking sheet. Sprinkle more Everything But The Bagel Seasoning on top of. Bake for 30 minutes. Remove from oven and let cool.

This is perfect for a low carb alternative. I find regular cloud bread tastes like egg, so this will be a great version with the extra flavours.

Yes, I agree that plain cloud bread is too eggy for my taste, but both the everything seasoned one and the rosemary Parmesan one are delicious alternatives.
