I’ve been doing intermittent fasting for the past couple of weeks and have found that it really helps keep me on track with staying low carb. I have been doing the 16:8 method, which means for 16 hours I don’t eat and then I get all my food during the 8 hours. So basically I eat breakfast at 11 am and then don’t eat after 7 pm.
At 10 this morning I was really wanting to eat. I wasn’t particularly starving, but after looking at delicious food on Pinterest and Instagram this morning, I really wanted to eat. So I decided to get in the kitchen and start making something, hoping that killing time in the kitchen will get me close to 11 am.
I wanted to create something that is versatile and I can use to flavor all types of food, kind of like ranch dressing. I know people who put ranch dressing on everything, from vegetables to pizza to ice cream. Just kidding, ranch dressing and ice cream would be gross. Then it occurred to me, a garlicky, herby, cream cheese spread that I could put on my breakfast, on my lunch and on my dinner. Of course I can by herb spreads at the store, but making it myself is so much cheaper!

I used a mix of fresh and dried herbs and garlic. Typically I use fresh dill and chives, but I didn’t have any, so I raided the spice cabinet and used dried dill and chives. I did use fresh garlic. Add a bit of sea salt and some freshly ground black pepper and mix it all together. I won’t tell if you lick the beaters.

Garlic Herb Cream Cheese Spread
Ingredients
- 8 ounces cream cheese, softened
- 3 cloves garlic
- 1 tablespoon dill (fresh or dried)
- 1 tablespoon chives (fresh or dried)
- sea salt and black pepper to taste
Instructions
Mix all ingredients until evenly combined. Refrigerate to meld flavors.
Notes
Use roasted garlic if raw garlic is too strong.
