Well these coffee chip frozen cream cheese bites give me another way to get that coffee fix. In small doses though.

These coffee chip frozen cream cheese bites also help with my occasional craving for sweet. I use Swerve, in the confectioners form to sweeten the cream cheese bites. In a previous post where I made Orange Creamsicle Cream Cheese Bites, I had mentioned that the Swerve was bothering my stomach, but that has stopped. It appears I adapted, and I believe the key is to gradually introduce it in to your diet. Also, I would avoid going crazy and eating a whole batch of cream cheese bites, because too much a good thing is never good.
For the coffee flavor I used two Starbucks Via instant coffee packets. So basically one batch of these coffee chip frozen cream cheese bites equals two cups of coffee. Another reason not to eat the whole batch! You’d be wired!

Lily’s Sweets Chocolates are sweetened with Stevia and I love them. They make chocolate bars (my fave is the Salted Almond and Milk Chocolate) as well as a bar of baking chocolate and baking chips. I used baking chips in this recipe, but in the future I think I might grab a dark chocolate bar and use shavings of chocolate. What do you think?

Low Carb Coffee Chip Frozen Cream Cheese Bites
Ingredients
- 8 ounces cream cheese, softened
- 1/2 cup butter, softened
- 1/3 cup Swerve, confectioners
- 2 tablespoons instant coffee powder
- 1/4 cup Lily's Sweets Baking Chocolate Chips
Instructions
In a large bowl cream together cream cheese, butter, sweetener and the coffee with a mixer. Stir in baking chips. Place in fridge for 15 minutes to firm up. Scoop up 1 tablespoon size balls and place on a silpat or lined baking sheet. Freeze until frozen. Keep in a container in the freezer.

How much liquid coffee would I use if I don't have instant coffee?

I don't use liquid coffee in this recipe due to it watering down the recipe and it will change the consistency. You could try very finely ground coffee beans.

I love these. I have made them a few times. I used King Arthur’s espresso powder, I switched 2T MCT oil for 2T cream cheese and added 1T cocoa powder. Amazing. Thanks for the recipe!
