Making weeknight meals for the family kind of stinks. Seriously. With three kids in sports, most weeknights are a challenge to get healthy food, that everyone will eat, on to the table. I mean I *try* to meal prep. I always have the best of intentions to have meals ready-to-go for the week. But…you know, life happens.

Weeknight Dinner Made Simple
The most basic of healthy dinners has become my weeknight go-to. I mean chicken and broccoli is staple right? For the kids, I add some quinoa to their bowls and then top it off with a drizzle of this smoky, garlicy cheese sauce. I have the system down, especially since I meal prep the chicken breasts ahead of time, either in the Instant Pot (using this recipe) or in the oven. I throw the cooked chicken in the oven to heat up while I’m preparing the cheese sauce and the veggies.

For the steamed broccoli, I have been using my Always Pan, which I’ve fallen in love with. I came with a steamer basket and it perfect for quickly steamed veggies. Just add some water to so that it’s just below to level of the steamer basket. Heat up the water on high on your stovetop. Once it starts steaming, add your broccoli florets and put the lid on, turning the heat to medium-high. Set the timer for 7 minutes (a little less if you like your broccoli firmer, a little more if you like it very tender.)
While the broccoli is cooking, make the cheese sauce on the stove. There’s no special trick to this other than throwing all the ingredients into the pot, heating on medium-low and stirring until it’s melted. It is done in under 10 minutes.
Then throw your chicken and broccoli into a bowl, drizzle with a couple tablespoons of cheese sauce and voila, dinner is done!

Low Carb Cheddar Cheese Sauce
The important thing to note about the cheddar cheese sauce is that it needs to be served right away. It will solidify as it cools, and while still delish, it’s not as great as it is when melty.
If your sauce is too thick for your liking, add a little bit more heavy cream or some unsweetened almond (or macadamia nut) milk to thin it. If the cheese sauce is too thin, add some more shredded cheese.

Ways to Change Up the Cheese Sauce
If you don’t like garlic or smoked paprika, or just want to switch up the flavors of this low carb cheese sauce, go right ahead! Here are a couple of ideas to get you started:
- Chili powder
- Onion powder
- Chipotle seasoning
- Black Pepper
- Dehydrated scallions
- Fresh green onions
- Different cheeses
- Very Veggie Cream Cheese

Low Carb Easy Cheddar Cheese Sauce
Ingredients
- 1 tablespoon butter
- 1 ounces cream cheese
- 2 tablespoons heavy cream
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1 cup shredded cheddar cheese (approx 70 grams)
Instructions
- Place all ingredients into pot on stove top, over medium-low heat.
- Stir with wooden spoon or rubber scraper until cheese sauce is melted and smooth.
- Serve immediately.
