Enjoy movie night snacking with this low carb roasted cauliflower popcorn recipe!
I love movie night where we pop a bunch of popcorn, watch a movie in our pajamas and all the kids fall asleep in the living room. That is the best! When you’re eating low carb and keto though, popcorn is a no-no. That’s okay, because we can make anything out of cauliflower right? Kinda kidding, kinda not.

During my 3 Day Refresh cleanse this week I fell in love with roasted veggies. (I documented my cleanse on my Instagram stories if you are interested.) I was telling the Mr. that the roasted broccoli reminded me just a little bit of popcorn. That’s were I got this idea.
This recipe makes one serving. I used about half of a cauliflower head and only the florets. I saved the stalks to make some riced cauliflower for my Cheesy Cheddar Cauliflower Rice.
Other Cauliflower Recipes You Will Love:
- 1/2 head cauliflower, florets (approximately 12 ounces)
- 1 tablespoon olive oil
- 1/2 tablespoon butter
Preheat oven to 425F.
Cut cauliflower into little bite sized florets.
Toss with olive oil and sprinkle with sea salt.
Spread out evenly on baking sheet.
Bake for 25 minutes, then turn cauliflower so evenly roasted.
Bake for another 10 minutes. Until brown and slightly crunchy.
Melt butter over cauliflower.
The cauliflower florets shrink whilst roasting.
