Looking for a quick and filling breakfast? This Southwest Breakfast Quesadilla gives you a huge amount of flavor with a huge amount of protein!

This Southwest Breakfast Quesadilla recipe came together out of a need for a quick breakfast that’s high in protein and my love of flame roasted green chiles.

I tend to eat a breakfast type meal mid-morning, after my run and resistance training. I like this meal to be high in protein and filling with a good amount of fiber. This breakfast quesadilla has 53 grams of protein and thanks to the low carb tortilla, 18 grams of fiber, and overall macro friendly.

I used to scramble the egg whites and then add them to the tortilla, but that gets messy when the eggs fall out. So now I cook the egg whites onto the tortilla. This makes it so the egg whites kind of line the inside of the tortilla and it’s way less messy.

First, lightly spray a 10 inch nonstick pan with avocado oil spray or whatever cooking spray you prefer. I use my Always Pan (it’s yellow!) Greasing the pan may sound redundant, but egg whites like to stick to anything, so whatever makes them easier to remove, is a good idea in my book.

Heat the pan to medium and add the egg whites, once they start turning from clear to white, place your tortilla right on top of them. Give the eggs another minute to cook. The eggs will stick to the tortilla, and then flip it over.

Place your toppings on top of the eggs and let the cheese melt while the tortilla gets crispy. Once ready, fold the quesadilla in half and eat while it’s warm.

Instructions

    In a 10 inch pan, lightly spray cooking spray and heat to medium. Pour in egg whites, and as they start to cook lay the tortilla on top. After a minute, when egg whites are cooked, flip over the tortilla and egg whites.

    On one half of tortilla, add cheese and on the other half add Canadian bacon and pre-cooked chicken, Once the cheese is melted and the meats are heated, spread the green chiles on top of the meats. Fold cheese side over the meat side and remove from heat.

    Slice in half and enjoy!
