For this sugar free blue mermaid vodka granita I used coconut milk as the base, but almond milk or even half and half would work too!
You are going to want a freezer safe dish for this granita and a flat spot in the freezer. Um I had to clear out a space, but I’m convinced that I need a second refrigerator.
The fun part of making this granita is raking it with a fork as it freezes. I usually check it after having it in the freezer for one hour and then every half hour after that.
I only used a 1/4 cup of vodka to make this blue mermaid vodka granita, because I wanted to make sure the granita would actually freeze. If you feel like you want a little more of a kick from the vodka, just add a bit after it has frozen, right before serving. No judgement here!

Sugar Free Blue Mermaid Vodka Granita
Ingredients
- 2 cups unsweetened coconut milk
- 1/4 cup vodka
- 1 cup sparkling water
- 4 tablespoons Torani Sugar Free Blue Raspberry Syrup
- 2 tablespoons Torani Sugar Free Pineapple Syrup
Instructions
Whisk the ingredients together in a bow until combined.
Pour into a shallow, freezer-safe dish. Let freeze for an hour then pull out and break up any frozen parts with a fork. Put it back in the freezer and check after another 30 minutes. Continue raking the granita with a fork every 30 minutes until the mixture is completely icy.
